Daily Docket and Homemaking Binder Update!


I have been working earnestly on making a daily docket that works for me.  I think I've found it.  I printed out ten of this puppy and am laminating them so they will go in my binder.   I thought it might be easier to use a dry erase marker and erase after a week, but we'll see if that was a wise decision or not.  If you are interested in a pdf copy or word attachment that can be edited, I can email it to you.  I just don't know how to set up a link to do that on here yet.  Send me an email at awilderman05@yahoo.com or make a comment below. 



Also, I have used the menu planner located HERE for a while, I printed a new one off and plan to laminate it too!

Cucumbers and Onions

As a child, our stand by side dish was always cucumbers and onions.  My mom would make a batch, and then keep adding to it, as we had fresh cucumbers, all week.  I made some last week for my family, and it is so simple to do!

Ingredients:

Sugar
Vinegar (I used apple cider vinegar, because I like it best, but you can use white vinegar too!)
Cucumbers (I just used one large one)
Onion


How to:

Peel your cucumbers if the skin is tough or if you don't like the skin, or just slice the cucumbers if you don't plan on peeling.  Slice the onion.  The mixture of cucumber to onion is dependent on how much you like the onion flavor.  I used 1/2 a large onion, sliced thinly.

To start out, I used 1 cup apple cider vinegar to 1 tablespoon sugar, I ended up using about 2 tablespoons sugar to 1 cup vinegar--it truly depends on the mix you and your family like and how "strong" your vinegar tastes...and how much you like it.  I let mine sit on the counter, covered for an hour to let the flavors blend and mix.  After that I decided I wanted a little mellower flavor, so I added some water.

This recipe is so flexible...it is up to you.  Let me know if you try it, and how you like it! It is a refreshing summer side!

Lunch!

I used to struggle with lunch...always thinking I had to "fix" something.  I often send dinner left-overs with Aaron, so we don't use those for lunches around here.  Macaroni and cheese is one of my favorite lunches, or a grilled cheese sandwich, but my littles don't really love those options.  So, now most of the time I get out the divided dishes and load them up with cheese, veggies, fruit, and a carb--like crackers and just go with it.  Other favorite lunches around here include making a big bowl of Chicken Pasta Salad to eat on all week, or a big bowl of tuna salad.  I also enjoy making a good summer fruit and lettuce salad, though for lunch I usually leave off the chicken.  The boys really LOVE that salad because of all of the fruit.  We also love cottage cheese and tomatoes during the summer, usually served with crackers and I often make chicken quesadillas with pre-cooked chicken from the freezer.  If Silas had his way, we would eat peanut butter and homemade strawberry freezer jam every day...he loves pbj.  When the air conditioning isn't on I might make mini pizzas from tortillias or english muffins.
