Our Garden


Before we moved, I had told Aaron that I really wanted to plant a garden this year. Last year, moving and being pregnant didn't really leave a whole lot of time (or energy) for that sort of thing. So, when I found out that our new house had a garden area...I was elated! I started planning in my head from day 1 and have such huge plans for this garden...I am not sure if it will live up to the expectation. Last week, we took the first step in planting our garden...we planted our seeds in an indoor green house. They have really grown a lot and every morning the boys run up to check and see what "God has done". I am really using this opportunity to teach the boys that our God does amazing things, we even plan on making a picture book of our adventure when we are done. Here are some pictures from our adventure so far!
The greenhouses came with little compressed "dirt"so before we could begin, we had to "decompress" it...the boys LOVED this step! The last picture is our planted seeds...approximately 5 min after planting.

This last picture is Levi--coming from the garden area...in his Garden boots, no longer "rain" or "cow boy" boots...They have all of their tractors in there and have been having a blast bulldozing, scooping, and dumptrucking it!

Vera Bradley, Tacos, and More

Today was absolutely an amazing day! I got up at the crack of dawn, mind you my kids sleep til at least 8:00 every day--most of the time 8:30, to go shopping! Today was the Vera Bradley outlet sale in Ft. Wayne and I dragged my kids out at 6:30 this morning to go. It was soooo fun. Aaron helped me get them up and put them in the van and I took their clothes to change them once we got there. I had tickets for the 7:30 to 10:00 session and didn't plan to get there until about 8:00--so I didn't have to fight the crowd. I got myself a new diaper bag and a backpack...and did a little Christmas shopping while I was out. It was really a blast and my kids were so well behaved. I am so totally a homebody...I really love to be at home, in my house (or outside) playing with my kids, etc...and I often get in a rhythm of just staying home, mostly because it is easier. But today I was reminded how polite and well behaved my kids are and that going out isn't that big of a deal anymore. I still take a long and use my triple stroller--because I would be crazy not to--but the boys are GREAT helpers and so eager to please. I have to remind myself over and over to not focus on a schedule but to embrace each moment with my kids and have fun....sometimes I get a little too schedule oriented. (good lesson for all aspects of my life too) Afterwards, we did a little more running around--Target, JC Penney for Lydia's 8 month pictures, and Sam's Club before we came home. There was some major construction going on outside of Sam's today--road construction--so when we were done shopping I pulled over there close and the boys watched the tractors, dump trucks and track hoes while I nursed. They had so much fun and was the highlight of their day.

Monday night, when Aaron came home, I had on the menu to make tacos. However, I had a huge headache--and when I got up to make dinner I realized he was already warming the oven to put a frozen pizza in. I have an absolutely amazing husband! So, yesterday was our taco night. I thought I'd go ahead and share what I do for tacos because my method has developed over time and we really enjoy them!

Tacos
1 lb ground beef or turkey ( I am using up the 1/2 cow we got, so I used beef)
After it is browned (with our without onions) add taco seasoning as you would usually do and reduce the water.
Here is my twist though--after that, add one can of nacho Campbell's cooking soup or 1 can of the cheddar (if I use cheddar, I also tend to throw in a couple of heaping tablespoons of salsa) AND one can of black beans rinsed (I always have these in my cabinets...they are a great staple item!)
I let this simmer and it will be kind of thick, but oohhh so yummy!

While that is cooking, I cook up some brown rice (yes, I said brown rice) I really like a restaurant that uses rice in it's burritos, tacos, etc...and tried it once and have never looked back.

When we assemble tacos, it is lettuce, rice, meat mixture, top with cheese, tomatoes or salsa, you get the picture. To my boys...they don't get taco shells...i just pile lettuce, meat mixture, rice, and cheese on their big plate and let them dip chips in it. They LOVE it! I use my leftovers for lunch the next day and either do Taco Salads or quesadillas or Taco Pizzas on wheat flour tortillas. Don't forget the rice in all of those too!

Menu Planning Monday


When I first got married I was very devoted to my menu plan. Even to the point of pouring over it for hours and often scouring through every recipe I have ever clipped to come up with the exact right mix. However, I got a little more lenient when the boys were born...just writing down something to write it down (Yes, I am the person who writes a list, then writes down the things she has just done, to add them to the list, so that she feels more accomplished. I'm not afraid to admit that--it's just who I am) and I piddled at scribbling down menu items on my calendar. Until December of last year 2009 when everything went down the drain in an effort to pack and prepare to move. There were more freezer meals and eating out, especially when Aaron moved ahead of us for 5 months, and less planning and saving money. Six weeks after that move was completed we had Lydia, and in those few weeks between moving, unpacking, and having a baby, my mom and I cooked up a storm and had a whole slew of freezer meals in the freezer and ready to go. SIX and a half months after move #1 we made move #2 and, staying in the same state, moved 3.5 hours away from our new home...to the place my children affectionately call our "new, new house". It was just an offer we couldn't refuse. Last week, wanting to get back on track, and take a break from unpacking--I created a menu plan...it has totally been at least a year since I did that, and am SO excited! So this week, I am joining Menu Planning Monday at I'm An Organizing Junkie and actually posting my menu!

Here is the VERY simple menu plan I have come up with for this week:

Monday: Tacos--I know easy, but later I'll come back and show you how I make tacos not so ordinary
Tuesday: Chili--I must admit, this is just for ease...
Wednesday: Bennigan's Night--they have $7.00 hamburgers and we love this place
Thursday: Bacon Ranch Slow Cooker Chicken--have never made this, but am excited to!
Friday: Pizza night--Homemade pizza crust, and all of the fixin's
Saturday: Chicken Cacciatore--I have made this a thousand times, it seems and usually double or triple it so I have some for the freezer!
Sunday: Hamburger Vegetable Soup--a family recipe, that 'll share later this week too!

All in all, a very simple week! How is your week shaping up?

It's Spring at McDonald's

At our McDonald's up here in northern Indiana...they have spring treat books, very similar to those that they had a Valentine's Day and Halloween. They are super handy and a good way to get inexpensive meals or snacks on the go...especially when we are headed to our home town. They include apple dippers, Milk or juice, a hamburger, and an ice cream cone. Just a money saving idea!

Easter A Holy Experience

I have really been enjoying this Easter Season with my family, even in the midst of our moving. It is so neat to see the boys really growing and learning about God. They are really enjoying the Resurrection Eggs and I have been blessed by the Easter Devotional by A Holy Experience. There are instructions on how to do an Easter Passion Tree with your family. We aren't doing that this year...just can't find any of my stuff, but I plan on it next year.
